From four generations ours has always been a Roman cuisine with all the typical dishes of the Roman and Jewish tradition, from artichokes alla giudia to rigatoni with pajata, from pasta alla amatriciana and gricia, from cacio e pepe alla carbonara, all with homemade pasta and respecting the flavors of tradition.
